basque cheesecake

this is the easiest basque cheesecake recipe you’ll ever find.

you only need 6 ingredients and just blitz them up in a blender!

the result? the lightest, fluffiest, creamiest cheesecake of your dreams.

ingredients 材料

2 blocks cream cheese (~450 g)

2 cups whole milk (~480 ml)

1/2 cup granulated sugar (~100g)

4 large eggs

1/4 cup flour (~35g)

juice of 1/2 lemon

 

directions 作り方

  1. pre-heat oven to 400 degrees.
  2. add all ingredients to a blender. blend until mixed!
  3. crumple parchment paper into the cake pan to fit. the random crumples will add to the aesthetic of the basque cheesecake! there’s no “perfect” here.
  4. strain the batter into the cake pan (optional – will improve smoothness).
  5. bake for 45-50 minutes.
  6. leave out at room temp to cool. store in the fridge overnight if you have time!
